  1. 1 tablespoon vegetable oil
  2. 1 medium brown onion, chopped
  3. 2 teaspoons ground cumin
  4. half teaspoon dried chilli flakes
  5. 620g carrots, peeled, quartered lengthways, sliced
  6. 1 zucchini, quartered lengthways, thickly sliced
  7. half cup dried crimson lentils
  8. 1 tablespoon Massel vegetable stock powder
  9. 270ml can coconut milk

  1. Heat oil in a huge saucepan over medium warmth. Add onion. Cook for 5 minutes or until softened. Add cumin and chilli. Cook for 1 minute or until fragrant. Add carrot. Cook, stirring occasionally, for five mins. Add zucchini, lentils, stock powder, coconut milk and five cups bloodless water. Bring to the boil. Reduce warmness to low. Simmer for forty mins or till vegetables and lentils are tender. Serve.
